9 of the World’s Best Pastry Chefs do Christmas

If pastry chefs ever needed an excuse to use edible glitter, food dye, moulds, and imagination Christmas has to be it.

After all, where would we be without edible snowmen, Christmas trees and baubles to add a sweet touch to our festivities?

With that in mind, we’ve rounded up some of the festive works of art from some of the best pastry chefs in the world. Taking a quick peek at their respective Instagram accounts to see how they’ve conjured up Christmas out of sugar this year.

From Italy to France and Mexico to Singapore, here’s a selection of some of the creations of some of the best pastry chefs around the world this year.

1. Ernst Knam, Italy

The German pastry chef who made a name for himself in Milan has been keeping Italians happy with his fine baking and chocolate skills both on and off screen, ever since he first set up shop over 20 years ago.

2. Janice Wong, Singapore

Chef Janice Wong from 2am:dessertbar in Singapore honed her trade under some of the world’s best chefs including Thomas Keller, Grant Achatz and French pastry chef Pierre Hermé. She has also twice won Asia’s Best Pastry Chef.

3. Jordi Roca, Spain

The youngest sibling of the endlessly creative trio of brothers running twice ranked the No.1 restaurant in the world, El Celler de Can Roca. The characteristically playful pastry chef Jordi Roca has also starred in the dessert series of Chef’s Table.

4. Cedric Grolet, France

Cédric Grolet, pastry chef at Paris’ Le Meurice and Best Pastry Chef in the World has come up with a creative riff on a French classic. The yule log with brown foam, crisps, cream, roasted chestnut biscuit and hazelnut praline, all raised by a lemon gel is a modest break from his fruit inspired creations. 

5. Dominique Ansel, USA

The US mastermind behind the groundbreaking cronut has become a household name. Dominique Ansel is celebrating this festive season with a Bûches de Noël (Yule log cakes) in three flavours. Double Chocolate (with flourless chocolate cake and chocolate mousse; it’s gluten-free too), Chestnut (with almond cake, chestnut cream, and candied chestnuts from France); and Banoffee (with caramelized bananas and a soft vanilla almond cake). 

6. Ignio Massari, Italy

The Italian pastry chef, with two pastry shops, numerous TV appearances and more accolades than can fit on a chef’s jacket, over 300 at the last count. Come Christmas time he’s also on the no.1 hit list for panettone!

7. Pierre Herme, France

The French master of macarons, Pierre Hermé, has chosen his Christmas theme in the sacred union of dark chocolate and toasted Piedmont hazelnuts to create the very first yule log that can be shipped anywhere in France. Lucky French!

8. Olga Noskovaa, Russia

Olga Noskovaa, the Russian pastry chef, is taking a reflective approach to the festive season with her signature mirror cakes that have seen her obtain an enormous following on Instagram.

9. Jesus Escalera, Mexico

Latin America’s Best Pastry Chef 2018 and chef and founder of dessert-only restaurant La Postrería in Guadalajara, Mexico is hard at work putting Christmas magic into his desserts with skills learnt from Albert Adriá (Ferran’s pastry chef brother) at El Bulli and from Heston Blumenthal at The Fat Duck.
